• BBQ chicken salad –
1. Heat olive oil in a pan over medium flame.
2. Season chicken breast with salt and pepper. Put this in the pan and flip till it is nicely cooked. Dice this chicken into small pieces.
3. Place lettuce in a bowl; add diced tomatoes, boiled corns, bell peppers, onion, and chicken pieces to it. Grate some cheddar cheese over it and gently toss to combine everything.
• Bacon and avocado macaroni salad –
1. Lemon thyme dressing –
In a bowl, add mayonnaise, lemon juice, sugar, lemon zest, thyme, salt and pepper and now mix this well using a mixer while slowly adding some olive oil to it.
2. Salad –
Heat olive oil in a pan and cook bacon in it until brown and crispy.
In a large bowl, add cooked macaroni, bacon, avocado and lemon thyme dressing.
Add more salt and pepper if required.
• Greek salad –
1. Vinaigrette –
Whisk olive oil, apple cider vinegar, lemon zest, lemon juice and sugar in a small bowl and set it aside.
2. Salad –
In a large bowl, place lettuce, add diced cucumber, onion, tomatoes, olives, goat cheese, salt and pepper. Pour the vinaigrette on top of the salad and gently toss to combine. Serve immediately.
